Hier werden seit zwanzig Jahren die Weine hauptsächlich aus San Giovese oder Vermentino Trauben gemacht; wie langweilig! Die lokale lange Geschichte erzählt uns von anderen Weinsorten wie Ciliegiolo, Alicante, Procanico, Nocchianello, Ansonica, Duropersico und Verdello, Namen, die in der Zwischenzeit vergessen waren. Christoph Fischer hat nach dreißig Jahren in Italien sich entschieden, diese neu zu entdecken und in seinem 3-Hektar umfassenden Weinberg zu pflanzen. Er hat dazu noch andere 2-Hektar gemietet und arbeitet mit anderen kleinen, älteren Weinbauern zusammen. Der Weinkeller befindet sich im Zentrum des Dorfes Poggio Murella, zwischen dem erloschenem Vulkan Monte Amiata und dem Meer um Monte Argentario. So the final blend is a very diverse crowd with a Procanico base. All fermentations take place in contact with the skins, with times varying depending on the grapes.  At the beginning of winter, the wine is placed in used tonneaux and remains there for about 18 months, undergoing frequent bâtonnage.
