Er lehnt es ab seine sprudelnden Versionen Lambrusco zu nennen, um sie von der industriellen Variante zu unterscheiden, die heute leider mit dem einst geschätzten und traditionellen Weinstil gleichgesetzt wird. Luciano arbeitet sowohl im Weingarten wie auch im Keller extrem penibel, wo er mit vorwiegend selbstkonstruierten Apparaten Schaumweine nach klassischem Vorbild keltert. Die Weine werden in der Flasche vergoren, wie es in der Emilia üblich war; bevor sie in den Handel kommen, werden sie allerdings – wie in der Champagne – degorgiert und per Hand verkorkt. Neben dem (Lambrusco) Rosso Viola produziert er aus den Salaminotrauben auch einen Rosé Frizzante und in manchen Jahren einen klassischen Rotwein. Luciano Saetti presst seine Trauben nicht, der Most für seine Weine fließt einzig durch Eigendruck ab.
